  • 2 tsp (10 mL) butter
  • 2 onions, chopped
  • 6 cups (1.5 L) mushrooms, thickly sliced
  • 1/3 cup (75 mL) all-purpose flour
  • 1 lb (454 g) asparagus
  • 3 eggs
  • 1-1/2 cups (375 mL) 1% milk
  • 1 tsp (5 mL) Dijon mustard
  • 1/2 tsp (2 mL) salt
  • 1 pinch cayenne pepper
  • 1 pinch nutmeg
  • 1 cup (250 mL) Swiss cheese, shredded

Cooking Process:

In nonstick skillet, melt butter over medium-high heat; cook onions for 5 minutes. Add mushrooms; cook, stirring, for about 8 minutes or until lightly browned. Sprinkle with flour; cook, stirring, for 1 minute. Remove from heat.
