Southwest Turkey Wrap

A delicious treat, using commodity turkey, fresh spinach, commodity mozzerella cheese, and a mild Southwest sauce all on a delicious whole grain tortilla.

50 ea Whole Wheat Tortillas Wraps, 12”

8¾ lbs Sliced Turkey, .7oz. slices

3 lbs Baby Spinach

3¼ lbs Mozzarella Cheese, shredded

6½ c SW Ranch Dressing

3¼ lbs Tortilla Chips

Cooking Process:

Two Days Before Service (Produce Kitchen):
1.) Mix the ranch dressing with the green chiles, chili powder, garlic, and cumin. Portion the product according to site orders and label each container with the product name, location, number of servings, and person who made the product. Refrigerate until transport.

Two Days Before Service (Entree Kitchen):
2.) Gather and portion the turkey and tortilla wraps for transport, labeling each as above.
The Day Before Service (Distribution):
3.) Transport the mozzarella cheese (from the warehouse), the SW Ranch dressing and Spinach (from produce kitchen), the sliced turkey and tortilla wraps (from the entrée kitchen)to the sites.

how to serve:

The Day of Service (Sites):
4.) Place the tortilla wraps on a clean, sanitized surface and place 4 slices of turkey, approx. 1 ½ cups of spinach, 1 ounce of shredded mozzarella, and use a ladle or spoodle to top with 2 tablespoons of Southwestern Ranch Dressing per tortilla wrap. Roll the wrap tightly, folding in the edges as you go and wrap each with a single layer of plastic wrap.
5.) Leaving the plastic wrap on the wrap, cut a small sliver off of each of the ends and then cut the remaining wrap into 4 equal slices. Serve two slices per person along with 6 tortilla chips on the side.
6.) You may save any leftover wraps for service the following day.
